The 25-year-old spent the previous season with the Liga F champions but has come to a mutual agreement to end her contract.
Roebuck made only two appearances for Barcelona, debuting in December of last year and then playing again in February.
Prior to her move to Spain, Roebuck featured in 136 matches for Manchester City, securing seven significant titles, including the Women's Super League and the FA Cup and League Cup three times each.
"We are thrilled to welcome Ellie to our club," stated Marisa Ewers, Aston Villa's director of women's football.
"She is an exciting addition to the squad and brings a wealth of experience that can enhance our performance levels."
Roebuck has earned 11 caps for England, but she is not included in the squad for Euro 2025 taking place in Switzerland.
